IFO does more than just think about individual investing. Yep – she cooks, too. She does her best cooking when she is very, very hungry. Here’s a recipe she invented yesterday:
1/4 white cabbage, shredded 1/2 cup carrot, shredded
1/2 large apple, unpeeled, shredded 2 Tblsp walnuts, chopped fairly small
2 Tblsp celery, chopped fairly small 2 – 4 Tblsp raisins
1/2 cup (or more, if necessary) mayonnaise 1/4 cup vanilla or honey Greek yogurt
1 tsp. lemon, lime juice, or apple cider vinegar salt and pepper to taste
Combine all ingredients and let stand at least 1/2 hour. Tastes even better the next day or so, since the flavors have blended. Scale up ingredients as needed for more servings.
